Maguro

Maguro, commonly known as tuna, is a prized fish in Japanese cuisine, especially valued for its rich flavor and firm texture. It is often served fresh as sashimi or sushi, with cuts ranging from lean to fatty, each offering a unique taste experience.

Flavor
One fish reads three ways along the loin. Akami is lean and clean with a bright, almost iron edge; chutoro carries even marbling and a rounder sweetness; otoro is dense with fat and softens at body temperature. That range is why bluefin is bought by cut rather than by weight.
Sourcing
One Ocean buys on the Toyosu and Fukuoka floors directly, through long-standing relationships with Ueken and Daiso. Selection happens at the auction rather than from a standing list, which is why availability moves day to day and why the day's list is published rather than a fixed catalogue.
Shipping Information
Packed at the market and flown overnight, held at temperature from the auction floor to the kitchen door. Next-day delivery runs to New York, Los Angeles, Miami, Atlanta, San Francisco, Orlando, Washington D.C. and Philadelphia. Other cities are quoted case by case.
